Veggie Miso Ramen
I had been looking for an easy ramen to put together for a long time here at home and I came across an awesome recipe from @justonecookbook on YouTube. Their vegetarian ramen base consists of a dashi made from dried shitakes and kombu seaweed first. Then layers of ground sesame seeds, miso, scallion, garlic, ginger, soy, sesame oil and hot chili bean paste are added. They used soy milk but I didn’t have any when I made this so I used unsweetened almond milk instead and it worked out perfectly. I topped the ramen off with spinach, shitake mushrooms, scallions and an 8 minute egg. This is the closest I have gotten to Japan flavor wise so I was soooo happy with the results 👍🏾☺️ Definitely a keeper! 😋😋😋
