Strawberry Salad with roasted almonds
Simple and refreshing are the best words to describe this salad. The almonds are smoky, the feta provides a bit of richness and the strawberries are a refreshing welcome to Summer.
Makes 2-3 Servings
8-10 Strawberries (quartered)
1/3 cup of almonds (roughly chopped)
1/4 cup of feta cheese
5 oz of baby romaine or spring mix salad leaves
Vinaigrette
1/2 of a small shallot (finely chopped)
2 tablespoons of red wine vinegar
1 teaspoon of whole grain mustard
2 teaspoons of honey
1/4 teaspoon of black pepper
1/4 teaspoon of salt
1/3 cup of olive oil

1 teaspoon of whole grain mustard
2 teaspoons of honey
1/4 teaspoon of black pepper
1/4 teaspoon of salt
1/3 cup of olive oil
Let's start of with our beautiful salad leaves. Make sure they are cleaned and dry and set them aside. Next roughly chop the almonds and place them in a frying pan on medium heat for 4-5 minutes. Make sure to toss or stir the nuts every 30 seconds or so. This will provide an even roast without burning the almonds.
Crumble the feta cheese and quarter the strawberries. Set them both aside.
Now let's work on the vinaigrette. Finely chop the shallot and place it into a bowl.
Now add in the red wine vinegar, whole grain mustard and honey.
Now add in the black pepper, salt and olive oil. Whisk the vinaigrette for about a minute. Now you can assemble the salad.
