Spinach, Sun-Dried Tomato & Feta Quiche
Fun fact....I met my husband on match.com many years ago when it was still a new concept. He ended up living across the street from me in the same apartment complex! 🤔😬😆 Yes, I know, I was frightened at that fact and because of this he didn’t know my real name or where I lived for many weeks. I had to make sure he wasn’t crazy 🤷♀️😜🤣. Funny how things work out sometimes isn’t it? Our first date was at a tea house which we ended up going to quite a bit. All of the flavors of this quiche were in an omelette the tea house kitchen served us. And over the years it turned into a quiche. One time I made it for a brunch that we held for our family during Easter years ago. My Abuelo was so fascinated by all the different types of food that I made, none of which he had ever tried before. My grandparents were used to eating just Puerto Rican cuisine most of the time so they were a little out of their comfort zone. This quiche ended up being my Abuelo’s favorite. From then on he was always hanging out in the kitchen with me, so curious about the dishes that I would make. I also remember him being stunned by the sight of fingerling potatoes because he wondered why anyone would want to eat something that looked like a finger 🤣🤣 But that is another story. 💛💛💛 I am really blabbing today! The pie dough is homemade and I plan to post a video of that recipe as well soon. ☺️
Serves 6-8
14 large eggs
1/4 cup of heavy cream
1/2 teaspoon of salt
1/4 teaspoon of pepper
Some wilted or frozen spinach, excess water removed
Sundried tomatoes and Feta cheese
1 large pie shell that has been pre baked
I bake the quiche at 375 degrees F for about 40 minutes or until the center is set but still a bit jiggly. ☺️
