Shrimp Toasts
I have had shrimp toasts before but I never realized just how they achieved the crunchiness on the outside? 🤔 After some research I was a little surprised and came up with a solution that wouldn’t leave all of us paying for it later....😆 The result was pure awesomeness. While my kids “toasted” each other with their toasts my husband and I had a nice cold beer with them. 😊 REALLY GOOD 👍🏾
Makes about 16 toasts
1 lb of shrimp, peeled and deveined
1 tablespoon of fresh ginger, chopped
1 tablespoon of sesame oil
1 tablespoon of rice wine vinegar
1 teaspoon of salt
1/2 teaspoon of black pepper
2 scallions (green parts set aside for garnish)
2 tablespoons of fresh cilantro (1 tablespoon set aside for garnish)
8 slices of good quality white bread
2 tablespoons of softened butter
Using a food processor, pulse everything together except for the bread, butter and garnishes. I blended mine together coarsely, I didn’t want the shrimp mixture to be a smooth paste entirely.
I made 4 sandwiches with the shrimp mixture buttering each side. You may or may not have some shrimp leftover depending on how thick you make your sandwiches. I filled mine all the way through to the edge smoothing them around with my fingers. I cut them into fours and placed them on a tray. I put them in my toaster oven on the bake setting at 375 degrees F for 20 minutes, flipping them over half way through. They were absolutely perfect. Buttery and crunchy on the outside and bursting with this umami shrimp flavor on the inside. We all couldn’t stop eating them!!! 😋😋😋
