Red Lentil Soup
It has been a long day and I am looking forward to Friday so I literally had to steal the hour it took me to make this soup today 😆 I haven’t made it in a long time so it was definitely welcome by the family. There is enough spices and wonderful flavor in this soup to brighten any day or evening. It is incredibly healthy and filling so it can usually carry me through the afternoon. My kids love it with their Dad’s toasted bread or a quesadilla 🤷♀️🤪 My husband and I love it with fresh coriander and a splash of lemon juice on top. 😋
Makes 6-8 Servings
2 medium onions (finely chopped)
2 garlic cloves (chopped)
3 teaspoons of ground coriander
2 teaspoons of cumin
2 teaspoons tumeric
1 teaspoon of sweet paprika
1/2 teaspoon of cinnamon
Salt & pepper to taste
4 cups of veggie broth
4 cups of water
2 cups of crushed tomatoes (about 20 ounces)
2 cups of dried red lentils
The juice of 1 lemon
1/4 teaspoon of red pepper flakes
Fresh cilantro leaves
