pear, blue & bacon skillet pan pizza
In the summer I grill quite a bit and placing bacon and blue cheese on my burger is just a must. But putting it on my pizza caught me by surprise because it was equally amazing. I added the pear for two purposes...one because I had seen it paired with blue cheese in other dishes but I had never tried it. And the other reason was to add some sweetness to the bold flavor that smoked bacon and blue cheese carries. This recipe is a win win.
Makes 2 servings
1/4 cup of slab bacon (or thick cut bacon sliced)
1 tablespoon of Danish blue cheese (stilton or gorgonzola can also be used)
1/2 of a Bartlett pear (thinly sliced)
1 cup of mozzarella cheese
1 teaspoon of butter
1/4 teaspoon of black pepper

Smoked slab bacon is the REAL bacon and it is absolutely delicious on this pizza! Slice the bacon into strips.
I love bartlett pears...and they add a perfect touch of sweetness to the pizza. Slice the pears very thin.
I am using a Danish blue cheese. Break it up with your fingertips.
I like to render out some of the fat from the slab bacon so that as it bakes on top of the pizza it becomes crisp. Saute the bacon in a drizzle of olive oil just for a few minutes and set it aside.
Preheat your oven to 425 degrees. Butter your skillet and add in the black pepper.
Place the pizza dough into the skillet and press down and outwards until the dough reaches the edges of the pan.
Add in the mozzarella, pears, blue cheese and bacon. Place it in the oven for about 12 or 13 minutes or just until the cheese begins to brown on top.
