curry pork burgers with cabbage apple slaw
This isn't your average burger. And that is precisely what I was looking for when I came across this recipe. You never think of ground pork when it comes to a burger so the first time I made this I was happily surprised at the rich flavor. To break away from the traditional lettuce, tomato and onion additions I added the cabbage for texture and the apple for a bit of sweetness to counteract the spice in the patty. The end result....amazing!
Makes about 6-7 burgers
For the burger patties
1 lb of ground pork
2 cloves of garlic (finely chopped)
3 scallions (finely chopped)
2 teaspoons of ground coriander
2 teaspoons of a mild curry powder
1/2 teaspoon of cayenne pepper
1 teaspoon of salt
2 teaspoons of worcestershire
Ketchup sauce
1 cup of ketchup
1/2 teaspoon of onion powder
1/2 teaspoon of garlic powder
1/4 teaspoon of cayenne pwder
Cabbage Apple slaw
1 apple sliced into thin strips (Gala, Fuji or Golden Delicious)
1/2 of a small green cabbage (cut into thin strips)

Let's work on the burger patties .In a large bowl combine the ground pork, garlic, scallions, coriander, curry powder, cayenne, salt and Worcestershire. With clean hands blend the pork mixture together, cover the bowl with plastic wrap and refrigerate it for at least 1 hour or overnight.
Ketchup by itself can be a bit boring sometimes so I am constantly trying to new flavor profiles. For this ketchup sauce I am adding onion powder, garlic powder and cayenne pepper. Stir to combine and cover it. Set it aside in the fridge until you are ready to use it.
The "slaw" I have created is really just some thinly sliced cabbage and apple straws. This is for a bit of crunch and sweetness.
Form the ground pork into patties and cook them evenly on each side. You will know when they are done when you press gently in the center with your fingertip. If it is firm to touch it is done. About 7-9 minutes total on medium heat.
Toast your bun lightly and assemble your burgers. A little ketchup sauce, some cabbage and apple...yum!
