Cornish Hens
I have made Cornish hens for years now every Thanksgiving because I simply just got tired of turkey. The first year I made this, the whole family was in shock because I wasn’t honoring tradition with a turkey, ham and pernil (roasted pork shoulder). But when I served this on everyone’s plate, and there were about 20 of us at the time, I didn’t hear a peep out of anyone’s mouth the whole meal because they enjoyed it so much! 😊😆 So Cornish hens wins every year 🙌🏾
I season my cornish hens simply with butter, salt and poultry seasoning (rosemary, oregano, sage, ginger, marjoram, thyme, pepper and salt). I also stuff them with wild rice and tie the legs and wings back so they won’t burn during cooking. I have never been an expert with string but I always make it work 🤣 I roasted the hens for about 1 hour at 400 degrees F. I then let them rest for about 10 minutes before carving.
