Classic Yellow Cake with Fresh Whipped Cream & Honey Blackberry Syrup
Ever since my kids have been home full time for school they request desserts a lot! When you add this with a hubby who has a sweet tooth it can be overwhelming sometimes 😆 I don’t give my kids candy other than the occasional Reese’s peanut butter chocolate and I haven’t made a cake in a couple of weeks so this was definitely special. If they want anything sweet I usually give them fruit or applesauce. Growing up there was always a yellow cake with chocolate frosting in a cake dish at home for my family to munch on. My mom was a huge Betty Crocker boxed cake fan. But I mean who wasn’t in the 80’s and the 90’s 🤷♀️ This recipe brings back every bit of nostalgia for that quintessential yellow cake flavor. I usually like mine plain without any frosting but I made it special for my family this time because I have been slacking in the dessert department for a couple of weeks 🤣 Can you blame me? Being a full time Mom is hard and when you combine that with also becoming a part time teacher recently I think this dessert is warranted 🤔🤪👍🏾
Yellow Cake Recipe
3 sticks of butter
2 cups of sugar
4 eggs
2 teaspoons of vanilla
1 cup of buttermilk
3 cups of flour
1 teaspoon of salt
1 teaspoon of baking powder
1/2 teaspoon of baking soda
For the blackberry syrup I used some frozen blackberries, raw sugar, a little water, honey and some scotch. I cooked it down until it reduced by half and coated the back of the spoon. 😋
