Arugula Salad with Capicola, Grapes, and Shaved Parmesan
While melon and prosciutto are a classic pairing, grapes and hot capicola ham are a modern approach to balancing sweet, hot and salty flavors. The parmesan and the olive oil tie it all together perfectly.
Makes about 4 servings
1 bunch of arugula (about 2 & 1/2 cups)
1/4 lb of dried hot capicola ham (found near or at the deli counter)
1 & 1/2 cups of firm green grapes (sliced in half)
1/2 cup of shaved parmesan
2 tablespoons of a high quality olive or avocado oil

Capicola can be found either near or at the deli counter. It is a dried salami that is either hot or sweet. For this salad I am using the hot version which partners well with the sweetness of the grapes. When you are at the deli counter ask to sample it first and make sure it is sliced thin. Grab the arugula, slice the grapes in half and have the parmesan ready.
This salad is very simple so here is the way I like to serve it. Lay the sliced capicola flat on a platter. Then add the arugula, grapes and parmesan.
Drizzle the oil on top and serve.
With each bite pick up a slice of the capicola and wrap the rest of the ingredients inside of it......
